Why could make the ethylene gas fruit ripen?
Because when the fruit picked or fruit will release ethylene gas. This gas causes the cells of fruit to make all the changes involved with the process of maturation. Such changes include chlorophyll is broken down, causing discoloration, altered starch into sugar and make sweet fruit, causing the fruit acid extract did not feel sour, and dipecahnya pectin that makes fruit softer.

What caused the ripening fruit?
Because the process of ripening fruit will naturally result in some natural gases such as water vapor, CO2 and acetylene (carbide gas = C2H2).
In chemistry into storage if the fruit is also added carbide it will spur the production of acetylene from the fruit, which means the faster maturation process. Carbide (CaC2) if in the open air will react with water vapor in the air (H2O) little by little to produce acetylene (C2H2).

Ethylene can be produced by several plant pathogenic fungi and bacteria. In the infected banana Pseudomonas solanacearum, ethylene content increases with penguningan (premature) fruit, whereas ethylene can not be detected in the healthy fruit.
